EMPLOYMENT RECORD:

1996-present Consulting Dietitian, the Guppy Gourmet, Nipissing, ON I provide a wide variety of consulting services in nutrition, dietetics, food services and related management, procurement and training. Clients have included long-term care, First Nations reserves, food manufacturers, food service distributors and marketing boards. 1990-2005 Senior Nutrition Consultant, Ministry of Community Safety and Correctional Services, Ontario. Corporate dietitian working with senior government officials, corporate offices and as many as 54 correctional institutions to co-ordinate, monitor and evaluate expenditures, food service performance and clinical nutrition needs of provincial adult inmates and young offenders in secure custody. Major job duties were:
  • clinical nutrition services for staff and inmates
  • research and evaluate new food products and food service production and delivery systems while ensuring cost-effective operations;
  • research and implement cook chill food production meal delivery and rethermalization technology with corresponding quality control tools and processes. Team lead for design, construction and successful start-up of a 40,000 square foot cook chill food production centre to feed 6,000 inmates. Led cook chill start-up operations for four large correctional facilities
  • replaced manual system of menu planning and nutrient analysis with food service software. Planned and developed regular cycle menus, restricted diet guidelines and menus (medical, religious, lifestyle), standardized recipes and food production systems
  • researched and wrote product specifications and bid requirements for quality standards for central food, beverages and equipment purchase
  • developed and delivered education and training to ministry physicians, pharmacists, nurses, cooks and food service managers on menus, restricted diets and food safety/HACCP
