This summer you can start to explore the foods of southern Mexico's Oaxaca state. Lots of fresh, bold flavours. Authentic Mexican cuisine evolved from both the indigenous peoples and the Spanish conquistadoras. You will work hands-on to help prepare a classic Mexican menu and have fun learning how to use a small propane torch to create the caramelized topping on the flan (like doing classic crème Brule).

Art of Making Soup:

Learn updated ways to use vegetables and herbs in fresh tasting, healthy soups that will warm you as the weather turns cooler. Class techniques include how to make savory vegetable and meat stocks (brown onion, vegetable, poultry, beef) that form the basis of exceptional soups. You will also learn to freeze herbs, use dried legumes (beans, peas and lentils) and whole grains and make traditional accompaniments to delicious soups. Recipes are higher in fibre and lower in fat and salt. The class ends with a sit down soup and salad lunch.
