Sadly I must report I am in Jamaica for three weeks returning home early June. I will be learning more delicious Caribbean cooking, attending the Calabash book and music festival and swimming in the ocean many times a day!!
I have been a registered dietitian for 25 years and enjoy teaching people how to create a healthy diet taking into account their preferences and lifestyle. Peruvian Dinner Party (The Land of the Inca):
Peruvian cuisine has emerged as a hot food trend. This class is gluten free. Peru is the largest country in South America and the esteemed home of the potato, maize (35 corn varieties), tomatoes and aji peppers. Sample new recipes for beverages, salads and the barbecue (grill) in this fun cooking class.
The main influences on Peruvian cuisine were the native Inca and Spanish. What I enjoy most about cooking Peruvian style dishes is that they rely on ingredients so common to our diet in northern Ontario: beans, corn, potatoes, tomatoes, chile peppers, sweet peppers, eggs and chicken. For Canada this is the 160 km. diet but it is hard to avoid using this catchy slogan! My 100 mile diet class has been very popular for the past three years and is designed to help you review and share ideas to build a healthy diet around SLOW foods - seasonal, local, organic and wild!
