Peruvian Dinner Party (Gluten Free):
Peruvian cuisine emerged as a hot food trend over the past few years. If you love Mexican food you will also love Peruvian food. Peru is the largest country in South America and the esteemed home of the potato, maize (35 corn varieties), tomatoes and aji peppers.
What I enjoy most about teaching Peruvian cooking is that many dishes rely on ingredients so that we can grow in northern Ontario: beans, corn, potatoes, tomatoes, chile peppers, sweet peppers, eggs and chicken. The food used in the class is from my own garden, collected from the wild, grown locally or organic! S.L.O.W. foods.
Time to bring on summer and try new recipes for beverages, salads and the barbecue! As with every class, please arrive hungry as we will sample throughout the class and end with a delightful feast!

Meal from Oaxaca, Mexico (Gluten Free):
Oaxaca (wa-Ha-ca), a southern Mexican mountain city is also in the state of Oaxaca. Jack Black filmed in Nacho Libre here. This is authentic and inspiring Mexican cuisine which is healthy and full of fresh bold flavours. Chiles, squashes, corn and cacao beans for chocolate were grown here by the indigenous people thousands of years ago and remain the cornerstone in the diet. The menu includes my own recipes and some adapted from ones my mother and I helped make at "Season's of My Heart" cooking school near Oaxaca. Please arrive hungry as we will sample throughout the class and end with a delightful feast! Mexican attire welcome! If you don't see the menu click on the course title.

Tikka and Tandoori (Gluten Free):
I love making and eating Indian food and the menu features many of my favourites. This has been my most popular class over the past 3 years. I learned the basics from many of my skilled Hindu friends when I live in Toronto 25 years ago and I carried on from there.
Recipes use ingredients available in northern Ontario. The spices used in Indian cooking not only create enticing flavours but they also promote good digestion, reduce inflammation, regulate blood sugars and promote overall good health. I use organic foods including organic chicken and home-grown foods. The Indian recipes are gluten free, high in fibre and lower in fat and sodium. Please arrive hungry as we will sample throughout the class and end with a delightful Indian feast!
