Description: Oaxaca (wa-Ha-ca), a southern Mexican mountain city is also in the state of Oaxaca. Jack Black filmed in Nacho Libre here. This is authentic and inspiring Mexican cuisine which is healthy and full of fresh bold flavours. Chiles, squashes, corn and cacao beans for chocolate were grown here by the indigenous people thousands of years ago and remain the cornerstone in the diet. The menu includes my own recipes and some adapted from ones my mother and I helped make at "Season's of My Heart" cooking school near Oaxaca.
